Apple Cinnamon Quinoa Bake

Ingredients
1 cup quinoa
2 cups chopped apples
1 tbsp cinnamon
2 cups almond milk
1/4 cup unsweetened applesauce
2 eggs (or flax eggs)
2 tbsp maple syrup
Instructions
Preheat oven to 375F.
Add all ingredients into a baking dish and stir to combine. Bake for about 50-60 minutes until the quinoa is cooked and the center is no longer liquidy.
Allow to cool for at least 15 minutes, then scoop and serve with desired toppings.
Notes
Toppings - yogurt (greek or coconut), sliced almonds, fresh apples, peanut butter, or a drizzle of honey or maple syrup
Store in the fridge for 4-5 days or in the freezer for 3-6 months.
