Apple Cinnamon Quinoa Bake

Ingredients

  • 1 cup quinoa

  • 2 cups chopped apples

  • 1 tbsp cinnamon

  • 2 cups almond milk

  • 1/4 cup unsweetened applesauce

  • 2 eggs (or flax eggs)

  • 2 tbsp maple syrup

Instructions

  1. Preheat oven to 375F.

  2. Add all ingredients into a baking dish and stir to combine. Bake for about 50-60 minutes until the quinoa is cooked and the center is no longer liquidy.

  3. Allow to cool for at least 15 minutes, then scoop and serve with desired toppings.

Notes

  • Toppings - yogurt (greek or coconut), sliced almonds, fresh apples, peanut butter, or a drizzle of honey or maple syrup

  • Store in the fridge for 4-5 days or in the freezer for 3-6 months.
