Apple Pie Oatmeal Cookies

Servings: 15 cookies

Ingredients

  • 1 cup instant oats

  • 3/4 cup whole wheat flour (or gluten free flour)

  • 1 1/2 tsp baking powder

  • 1 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 2 tbsp coconut oil (or unsalted butter), melted

  • 1 large egg

  • 1 tsp vanilla extract

  • 1/2 cup agave

  • 1 cup finely diced red apple (about 1 medium)

Instructions

  1. Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl. In a separate bowl, whisk together the coconut oil (or butter), egg, and vanilla. Stir in the agave. Add in the flour mixture, stirring until just incorporated. Fold in the apple. Chill for 30 minutes.

  2. Preheat oven to 325F, and line a baking sheet with parchment paper.

  3. Drop the cookie dough into 15 rounded scoops onto cookie sheet using a spoon and spatula. Flatten slightly. Bake for 11-14 minutes. Cool on the pan for 10 minutes before moving to a wire rack.

Notes

  • Be sure to cut the apples very finely! The larger the chunks, the crunchier and less soft they will be.

  • These cookies are ready to come out of the oven when the centres still feel slightly soft and underdone. They will continue to cook once they have been taken out of the oven.

  • Honey or maple syrup can be substituted for the agave. (or use 1/2 cup of coconut sugar and 5 tbsp milk)

  • Store leftover cookies in an airtight container. Store at room temperature for 1 week, or in the fridge for longer. They also freeze well once baked and cooled.
