Brownie Chia Seed Pudding

Ingredients

  • 3 tbsp cocoa powder

  • 2 tbsp maple syrup (or honey)

  • 1 tsp vanilla

  • 1 cup milk of choice

  • 1/2 cup chia seeds

  • Pinch of salt

  • Toppings of choice: raspberries, chocolate shavings, coconut cream, nuts/seeds

Instructions

  1. In a bowl, whisk together cocoa powder, maple syrup, vanilla and salt until smooth and well combined. Pour in the milk and stir until there are no lumps. Add the chia seeds and stir for about 1 minute to distribute them evenly.

  2. Let the pudding sit at room temperature for 15 minutes. After 15 minutes, stir well to redistribute any settled seeds and break up any clumps that may have formed.

  3. Transfer the pudding to the fridge and chill for at least 4 hours (preferably overnight).

  4. Remove the pudding from the fridge and stir to ensure an even consistency. Divide between serving bowls and top with toppings of choice (raspberries, chocolate shavings, coconut cream, nuts and seeds).

Notes

  • Resting overnight allows the chia seeds to fully hydrate and creates a pudding-like consistency.

  • Keep in an airtight container or individual jars in the fridge for up to 5 days.
