Chocolate Covered Strawberry Clusters

Ingredients
2 cups fresh strawberries, diced
1 cup plain Greek yogurt
12 oz dark chocolate chips
1 tsp coconut oil - optional
sea salt - optional
Instructions
Line a baking sheet with parchment paper and set aside.
In a mixing bowl, combine the diced strawberries with greek yogurt. Drop the yogurt mixture into small bites/clusters onto the lined baking sheet, making sure to space them out. The recipe should make about 8, 2-inch sized yogurt bites.
Transfer the baking sheet with the yogurt bites on to the freezer and freeze them until frozen solid (about 30 minutes).
Once the yogurt bites are frozen, place the chocolate chips into a microwave safe-bowl and add coconut oil, if using. Melt the chocolate by putting them in the microwave in 30-second intervals, stirring in between until melted. Let melted chocolate sit at room temperature for 3-5 minutes.
Remove the yogurt bites from the freezer and use a fork to dip each one completely into the melted chocolate and return to baking sheet. Sprinkle with sea salt if desired.
Let sit for a few minutes to allow the chocolate to harden.
Notes
Use fresh fruit for the best results.
Use an ice cream scoop to drop the yogurt mixture into even amounts.
Store any leftovers in the refrigerator in a container for up to 4 days. Freeze by placing them in between parchment paper in a freezer-friendly container for up to a month.
Other flavours:
Raspberry - swap strawberries with raspberries and use raspberry or plain Greek yogurt
Tropical - swap strawberries with diced fresh pineapple and use coconut-flavoured Greek yogurt
Peanut Butter Banana - Mix smooth peanut butter into the yogurt mixture and swap strawberries for small banana chunks.
