Feta-licious Watermelon Salad

Ingredients

  • 4 cups watermelon, cubed

  • 1/2 cup feta cheese, crumbled (or vegan feta - recipe below)

  • 1/4 cup fresh mint leaves, chopped

  • 2 tbsp extra-virgin olive oil

  • 1 tbsp balsamic vinegar

  • salt and pepper, to taste

Instructions

  1. In a large bowl, combine watermelon, feta, and mint.

  2. In a small bowl, whisk together olive oil and balsamic vinegar. Season with salt and pepper to taste.

  3. Drizzle the dressing over the watermelon mixture and toss to combine.

  4. Serve chilled and enjoy!

Notes

  • Vegan Feta: crumble tofu and marinate in a mixture of olive oil, lemon juice, and herbs.

  • You could also add some sliced red onions, cucumber, or arugula to the salad for added crunch and flavour. Pair with a protein source for an easy, summer meal!
