Greek Yogurt Pancakes

Ingredients
1 cup flour
1 1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup Greek yogurt
1/4 cup milk or water
2 eggs
1/2 tsp vanilla
2 tbsp butter, melted
Instructions
In a large bowl, combine the flour, baking powder, baking soda, and salt.
In a separate bowl or blender, whisk the yogurt, milk/water, eggs, vanilla and melted butter. Pour the wet mixture into the flour bowl and combine.
Heat a large non-stick pan or griddle over medium heat, and once hot, spray with non-stick cooking spray.
Pour 1/4 cup of batter per pancake. Cook pancakes for about 2 minutes, until the edges begin to look defined and bubbles form. Flip pancakes over and cook for another 2 minutes on the other side.
Serve with your favourite pancake toppings.
Notes
Make sure not to press down on the pancakes with the spatula.
Full or non-fat Greek yogurt works for this recipe (plain or flavoured)
