Greek Yogurt Pancakes

Ingredients

  • 1 cup flour

  • 1 1/4 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1 cup Greek yogurt

  • 1/4 cup milk or water

  • 2 eggs

  • 1/2 tsp vanilla

  • 2 tbsp butter, melted

Instructions

  1. In a large bowl, combine the flour, baking powder, baking soda, and salt.

  2. In a separate bowl or blender, whisk the yogurt, milk/water, eggs, vanilla and melted butter. Pour the wet mixture into the flour bowl and combine.

  3. Heat a large non-stick pan or griddle over medium heat, and once hot, spray with non-stick cooking spray.

  4. Pour 1/4 cup of batter per pancake. Cook pancakes for about 2 minutes, until the edges begin to look defined and bubbles form. Flip pancakes over and cook for another 2 minutes on the other side.

  5. Serve with your favourite pancake toppings.

Notes

  • Make sure not to press down on the pancakes with the spatula.

  • Full or non-fat Greek yogurt works for this recipe (plain or flavoured)
