Lemon Coconut Protein Bars

Ingredients
2 cups sweetened shredded coconut
1 cup vanilla protein powder
1 cup almond flour
1/4 cup coconut oil, melted
1/4 cup honey
1 lemon, zested and juiced
Drizzle:
1/4 cup white chocolate chips
1 tsp coconut oil
Instructions
Line a 9x5" loaf pan with parchment, leaving overhang on the sides.
Pulse everything (except the drizzle) in a food processor until it sticks together. Add in another splash of lemon juice if it's crumbly.
Press firmly and evenly into the pan.
Microwave the chocolate chips and coconut oil in 30-second bursts, stirring between until smooth. Drizzle over the top.
Refrigerate at least 2 hours, then slice.
