Mexi-Breakfast Scramble

Ingredients
1/2 lb ground beef
1 tbsp chili powder
1 tsp cumin
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper, to taste
1 bell pepper, diced
1/2 cup green onion, sliced
1 tomato, diced
1 avocado, diced
4 eggs
1 tbsp olive oil
Instructions
In a skillet over medium-high heat, brown the ground beef until cooked through. Drain any excess grease.
Add chili powder, cumin, garlic powder, paprika, salt, and pepper to the skillet. Stir until the beef is well-coated in the spices.
Add diced bell pepper and green onion to the skillet. Cook until the vegetables are slightly softened, about 3-4 minutes.
Add diced tomato and avocado to the skillet. Stir gently to combine with the beef and vegetables.
Crack the eggs into the skillet and stir them into the mixture. Cook until the eggs are scrambled and cooked through, about 2-3 minutes.
Drizzle olive oil over the top of the scramble, and serve hot.
Notes
If you are looking for a faster option, prep your taco meat ahead of time and use it all week.
Top with your favourite taco toppings - jalepenos, beans, etc!
