Pineapple Chicken (Slow Cooker)

Ingredients

  • 3-4 boneless, skinless chicken breasts

  • 1/2 cup red onion, chopped

  • 1 jalapeno, minced

  • 1 can pineapple tidbits, drained

  • 1 tbsp sriracha

  • 1 tbsp prepared mustard

  • 1 1/2 tbsp garlic, minced

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • 1/3 cup water

Instructions

  1. Combine red onion, jalapeno, pineapple, sriracha, mustard, garlic, cumin, chili powder, and water in a bowl. Stir well.

  2. Place chicken breast in the bottom of the slow cooker.

  3. Pour sauce mixture overtop.

  4. Cook on high for 3 hours or low for 5 hours.

  5. Shred the chicken and serve in tortillas, or on top of rice or your favourite salad!
