Baked Protein Oatmeal

Ingredients
2 cups rolled oats
4 large eggs
1/4 cup vanilla protein powder
1/4 cup honey (or maple syrup)
2 cups milk of choice (unsweetened almond recommended)
1 tsp vanilla extract
1/4 cup chopped nuts of choice (almonds, pecans, etc) optional - skip if you do not want
1 large banana, sliced
1 cup mixed berries (fresh or frozen)
1 tsp oil of choice (coconut recommended) to grease pan
Instructions
Preheat oven to 350 degrees F and grease a 9x13 baking dish with oil of choice.
In large mixing bowl, whisk together eggs, protein powder, honey, vanilla and milk until they are frothy.
Add in oats and stir well until evenly combined.
If time allows, let the mixture sit for 30 minutes to soak into the oats.
Next, fold in the nuts, bananas, and berries.
Transfer the mixture to the prepared baking dish.
Bake for 30-35 minutes or until the top and edges are golden brown and the center of the oats is set. Remove from the oven and cool slightly.
Cut into 6 even squares or bars. Store in an airtight container for up to one week in the refrigerator.
Notes
Oats reheat very well for serving.
Try topping with a scoop of greek yogurt for an added boost of protein.
Swap the chopped nuts for a few tablespoons of nut butter.
If you don’t enjoy protein powder, you can leave it out or swap it for a few tablespoons of chia seeds instead.
