Protein Tiramisu

Ingredients

  • 2 rice cakes

  • 1 cup cold coffee

  • 113 g (approx 1/2 cup) plain greek yogurt (or yogurt of choice)

  • 1 scoop vanilla protein powder

  • 2 tbsp almond milk (or milk of choice)

  • cocoa powder

Instructions

  1. Mix yogurt, protein powder, and almond milk together until smooth to make a protein custard.

  2. Dip each rice cake in coffee. Don't leave them in too long or they will fall apart.

  3. Spread custard on the bottom of a small dish (about the shape and size of the rice cake). Add the first coffee soaked rice cake. Top with more custard. Add the second rice cake and top with remaining protein custard.

  4. Dust the top with cocoa powder. Let sit in the fridge for at least 2 hours (overnight is best) to set up.
