Baked Pumpkin Oatmeal

Ingredients

  • 1 cup milk (of choice)

  • 15-oz can pumpkin puree

  • 3 tbsp pure maple syrup or honey

  • 2 eggs

  • 1 tsp vanilla

  • 2 cups rolled oats

  • 2 tsp pumpkin pie spice

  • 1/4 tsp salt

  • Optional toppings: nuts, raisins, craisins, chocolate chips

Instructions

  1. Preheat oven to 350F and grease a 9x9 baking dish.

  2. In a large bowl, whisk together eggs, milk, pumpkin puree, maple syrup and vanilla extract.

  3. Add rolled oats, pumpkin pie spice, and sea salt. Stir until all ingredients are evenly incorporated. Fold in optional toppings if you'd like.

  4. Pour oatmeal mixture into the baking dish and spread it evenly. Bake in preheated oven for 30 to 35 minutes, until the top is set and lightly golden.

  5. Allow baked oatmeal to cool for several minutes before serving.

Notes

  • Store leftovers in the fridge for up to 4 days and reheat with a little milk.
