Quinoa Breakfast Bake

Ingredients

  • 2 bananas, mashed

  • 1 cup quinoa

  • 2 tbsp chia seeds

  • 2 cups milk of choice

  • 2 tsp cinnamon

  • 2 tsp vanilla

  • 2 tbsp maple syrup (optional)

  • 1 1/2 cups fresh or frozen berries or chopped apple

Toppings:

  • yogurt of choice

  • fresh fruit

  • nuts and/or seeds

  • almond milk

Instructions

  1. Add the bananas into a large baking dish and mash them well.

  2. Next, add all of the ingredients on top, except for the fruit, and whisk well until everything is incorporated.

  3. Add in the berries and make sure they are spread out evenly so there is sweetness in every bite!

  4. Bake at 350F for 60-70 minutes, until the quinoa is cooked. Mine was finished after 60 minutes.

notes

  • Add in 2 scoops of vegan vanilla protein powder and an extra 1/3 cup of milk.
