Stuffed Taco Peppers

Ingredients

  • 1 tbsp olive oil

  • 1/2 cup onion, diced

  • 1 tbsp garlic, minced

  • 1 lb ground turkey or ground beef

  • 4 large bell peppers, halved

  • 1 cup canned tomato sauce

  • 1 tbsp taco seasoning

  • 1 cup black beans

  • 1 cup frozen corn

  • 1 cup cooked white or brown rice

  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350F and prepare a greased 9x13 oven-safe baking dish.

  2. In a saute pan, heat olive oil on medium high heat.

  3. Cook onions, garlic, and ground turkey (or beef) in olive oil for 10 minutes or until the turkey is browned.

  4. While the meat is cooking, prepare the peppers. Slice halfway from top to bottom. Remove seeds and any white inner pieces. Place pepper halves in prepared baking dish.

  5. When the ground turkey is cooked, remove from the heat. Stir in tomato sauce, spices, black beans, corn and cooked rice until combined.

  6. Stuff the peppers with turkey filling (about 3/4 cup per pepper). Try to pack the filling into the peppers using a spoon or your hands. Top with a sprinkle of cheddar cheese.

  7. Bake the peppers uncovered in the oven for 15-20 minutes or until the cheese on top is melted and bubbling. The peppers should be pierced easily with a fork.
