Rainbow Veggie Skewers

Ingredients

  • wooden skewers

  • 4 medium red onion

  • 4 medium zucchini

  • 2 red bell pepper

  • 2 orange bell pepper

  • 2 yellow bell pepper

  • 2 green bell pepper

  • olive oil

  • salt and pepper, to taste

  • seasonings of choice (optional)

Instructions

  1. Soak the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.

  2. Wash and chop the vegetables into bite-sized pieces.

  3. Thread the vegetables onto the skewers, alternating between different types of vegetables.

  4. Brush the skewers with olive oil and season with salt and pepper (and seasoning of choice, if desired).

  5. Preheat the grill to medium-high heat.

  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.

  7. Serve the skewers hot off the grill and enjoy!

Notes

  • Optional: Add minced garlic, herbs (ex: rosemary, thyme) or a squeeze of lemon juice to the olive oil for extra flavour.
