Wicker Chair Muffins
We nicknamed these muffins this because Cory's co-workers asked him why he ate food that looked like wicker furniture, and it stuck!
You will need 2 bowls and a KitchenAid mixer or 3 bowls to make these muffins. I also use my food processor to shred the apple, zucchini, and carrot. You can buy the weird flours at the Bulk Barn or we have made this recipe with 2 Cups of gluten-free flour and it turned out fine, so don’t wait to make these!
Instructions
Heat oven to 375F.
In bowl #1, combine:
2 cups carrots, shredded
1 cup apple, shredded
1 cup zucchini, shredded
3/4 cup coconut, shredded
1/2 cup almonds, chopped
1/2 cup pumpkin seeds
1/2 cup walnuts, chopped
1/2 cup raisins
In the KitchenAid bowl, combine:
1 cup gluten free flour
1/2 cup teff flour
1/2 cup sourghum flour
1 cup coconut sugar
1 tbsp cinnamon
2 tsp baking soda
1/2 tsp salt
In a third bowl, combine:
1/2 cup applesauce
1/2 cup coconut oil, melted
3 eggs
1 tsp vanilla
Add the wet ingredients to the dry in the KitchenAid and stir together.
Slowly add everything from bowl 1. The fruit will help to moisten the batter.
Spoon into a greased muffin tin and bake for 22 minutes.
Let cool and freeze.
